The clay I normally use for my models as seen below is called Cernit. It is an oven back clay. I have decided to start using glass eyes as well. They really create a liveliness. I will be trying another clay in the Sculpy family; I'm usually not a big fan of Sculpy, but this one clay is listed in the "doll" making category. The Cernit is nice because it has a porcelain appearance after heating, and so painting is not always necessary. You can buy Cernit online from Dick Blick and Utrecht art supply stores.
